Like something they’ll be equally happy to eat that isn’t weird to them. Ideally I’ll order some food on the way, it’s outside most people are ordering food to share. I live in a city, all cuisines are on the table.
I’m thinking maybe (non-ghee) Indian, but honestly I really feel like there’s options that I’m totally overlooking.
I do have time to prepare food, but I’d really rather ride my bicycle than drive.
Any ideas?
things that have worked good for me are things that aren’t trying to be meat
so vegan chilli, roasted vegetables etc.

Yeah, koshari is amazing. When I find myself in Egypt it’s all I eat when I’m there. There’s supposedly a koshari place some 35+ miles from me now, but I don’t want to drive that far to be disappointed.
I am not vegan but have made a similar recipe to this many many times and love it. Extremely cheap to make and takes 0 effort with an instant pot.
Fresh red onion, jalapeños, cilantro m, lime wedges and corn chips on the side.

For those that don’t want to click I usually do 2 cans of beans - 1 black, 1 pinto, a can of diced tomatoes, lentils, spices and vegetable broth. Season to taste with extra heat or salt. Takes around 15min in the instant pot.
Friendly bloodmouth, checking in.
Eggplant fries.
Hummus and veggies.
Chips and guacamole.
Koshari (this is a longshot but soooooo good).
The most basic tossed green salad you can find and bring up as much as possible.
mediterranean is the way to go imo obviously just hummus and pita is a staple and super easy tabouli felafel real easy to whip up some vegan shakshuka
and like other people have mentioned, it’s all stuff that nobody is gonna go “wait, vegan? yeuck icky!”
It’s been on the mind lately, and I dunno how it would fit into the general palette but falafel might be good, nuthin like fried food to sneak in the veggies

Way more people eat Indian than vegan, even outside India. It’s in the normie tier of “ethnic” food along with Mexican, Greek, Thai, Chinese, Italian and Japanese.

No it isn’t, most of it has ghee
Yea it can be really tough to get answers from places about whether their dishes have ghee. I’ve legit been told no dairy, taken a bite, and instantly tasted the ghee.
what? all Indian restaurants ive been to have mostly meat based entrees. you can def easily do vegan, but the menu has a ton of meat
Not sure how this got in my feed, but I’ll tell ya that about 10 years ago, I lived in Portland. I was dating a girl that was very kombucha patchouli urban hippy-esque vegan. Anyway, some friends had a potluck and she and two of her friends each brought the same thing…quinoa salad with spinach.
TL;DR I don’t know Jack, but quinoa salad is nice and neutral. Nobody’s going to question why it’s vegan.

Pick something that isn’t trying to be or replace meat. Always love a good fresh salsa, maybe a stir fry or curry of some kind

I love to make Cuban Black Beans w/ maybe some nice rice :) pairs well with any meal but can act as a meal on it’s own as well. Be sure to bring the lime!
I’ve only had cuban black beans once and I have no idea how accurate they were considering it was at a restaurant in the midwestern US, but god damn those were some amazing beans
